VIA FONTE
The "via fonte" is a cuvée made from the grape varieties: Carbenet Sauvignon, Sangiovese, Petit Verdot & Syrah. The act behind the complex wine is the cultivation of the grapes, which grow in an east-west direction so as to absorb an enamel of sun ripening. The soil is clayey, peculiar, very calcareous and therefore very nutrient-rich for the vines, which is reflected in the bouquet.

harvest time: In the month of September, when phenolic maturity is reached.

winemaking technique: Destemming and soft and short pressing.
maceration: At low temperature, fermentation at controlled temperature in thermoconditioned steel tanks for 15-20 days. Spontaneous malolactic fermentation at the end of the alcoholic fermentation.
aging time in wood: Partly in wood, partly in steel tanks.
bottle aging: 6 months.
organoleptic properties
Color: Intense ruby red with pronounced violet reflections.
bouquet: Complex, persistent, characterized by spicy notes of cocoa and coffee with mineral nuances and hints of cherry and blueberry.
The taste: Well structured, spicy, fresh and soft attack, articulated progression, long finish. Spicy aroma in the mouth with notes of liquorice and cocoa.
pairing: Goes well with meat-based first courses, mixed roasts.
